Marc Pauvert of the Four Seasons, one of the country's only Certified, classically trained Master Butchers, will be demonstrating the fine art of professional, classic French butchery with a pig. Award Winning, Certified Executive Chef Eric Yeager, Culinary Program Director for Stratford University, will be constructing a multi-course meal for all class participants. A portion of the proceeds will be utilized by the Chaine des Rotisseurs in development of Stratford Student Scholarships.
